Vista Ostuni to partner with celebrated Italian Chef Andrea Berton

Vista Ostuni, the highly anticipated boutique hotel transforming Ostuni’s 14th-Century former convent and tobacco-processing factory, has announced a landmark partnership with celebrated Italian Chef Andrea Berton, who will curate the hotel’s entire F&B offering once open in summer 2025.

The petite, 28-key hotel will feature two distinct restaurants overseen by Berton; Bianca Bistrot, a lively, all-day garden restaurant open from breakfast until aperitivo hour; and Berton al Vista, a fine dining restaurant located on the first floor, overlooking the olive grove and the sea. Guests will also be welcomed to the Library Bar and the rooftop, both convivial spaces designed for conversations over cocktails, against a pastoral backdrop of the Apulian countryside.
At Bianca Bistrot, menus will feature plates that combine Italian tradition with the flavours of Puglia. Classic international dishes will be reinterpreted with local ingredients, such as a Caesar salad and an Apulian Club sandwich. The menu will also offer vegetarian and vegan options, all designed with an Italian and regional twist.
The fine dining restaurant, Berton al Vista, will be a showcase of Chef Andrea Berton’s philosophy and will champion the Puglia region’s high-quality raw ingredients. The central element will be broth, a notable feature of Berton’s style, reimagined with local ingredients to create a distinctly Apulian dining experience. A signature dish will be frisella, a typical toasted bread originating from southern regions of Italy such as Puglia and Campania, which Berton will present in an acqua e sale style, a bread salad often made by farmers with rehydrated bread, tomatoes, olive oil and salt.

Vista Ostuni will open in July 2025, a boutique hotel within the walls of a restored 14th-Century palazzo in the ‘White City’ of Ostuni, Puglia. The 28-key hotel is the third property in the Vista collection, by the Passera family of hoteliers, who aim to curate exceptional experiences in Italy’s iconic yet underrated locations away from the typical tourist trails. With sustainability and ESG efforts at the heart of the project, Vista Ostuni is working towards LEED® certification, the globally recognised standard for eco-friendly hospitality operations.
Vista Ostuni will open in Summer 2025. Room rates start from €1,500.

Vista Ostuni is 37km from Brindisi airport, just 28 minutes drive by car, or one hour from Bari. During the summer, almost daily flights from London to Brindisi take 2.5 hours.
