Originally from Mar del Plata, Argentina, Carbonari brings over twenty years of experience in the hospitality industry, having worked with prestigious brands such as Sheraton, The Luxury Collection, Four Seasons, Westin, W Hotels, and Canopy by Hilton across four different countries.
Carbonari’s passion for the hospitality industry began at a young age, and her career has evolved from roles in food and beverage to leadership positions, including her most recent role as General Manager of Canopy by Hilton in Cancun. In her new position as General Manager of Waldorf Astoria Cancun, she oversees the overall operations, leading the team to deliver the exceptional experiences that Hilton is renowned for.
Holding a degree in Hotel Business Administration from Escuela Superior de Hotelería in Buenos Aires, Argentina, Carbonari has consistently demonstrated her expertise in luxury service, successfully managing properties to ensure guest satisfaction and financial success.

Chef Piatti is also the author of La Tierra De Los Platos (“The Land of Piatti”), a cookbook that weaves together his heritage and passion for locally sourced ingredients, rooted in the culinary traditions of his family.
