Number One, The Balmoral hotel in Edinburgh’s fine-dining restaurant, is delighted to announce that Head Chef Mathew Sherry has been recognised as Hotel Restaurant Chef of the Year at The Caterer’s 2023 Hotel Cateys.
The Hotel Cateys awards are judged by over 100 industry experts, and feature some of the most creative and successful hotel operators and their employees in the UK. Mathew Sherry was honoured to be shortlisted for the prestigious award along with fellow chefs from across the UK hospitality industry.
During the award announcement, Mathew was praised by the judges at the Hotel Cateys for his coaching skills, he was described as a role model which is shown by his ability to effortlessly link between front and back of house.
The Edinburgh born chef alongside Restaurant Manager Emma Hemy, Head Sommelier Callum McCann and award-winning restaurant team showcase the finest local, Scottish and British produce through seasonal tasting menus and a three course dinner menu.
Since his appointment in May 2021, Mathew has used classical flavours and modern techniques to create seasonal menus at Number One. The acclaimed restaurant’s team is committed to creating the finest culinary experience through the true Scottish hospitality delivered to each guest.

The exciting announcement comes after Number One launched its exclusive private dining room in August 2023. The new intimate space seats up to 10 guests and offers an elegant setting for customers to celebrate special occasions such as anniversaries, private celebrations and directors retreats.
