Chef Rakesh’s journey into the culinary world has been deeply influenced by his roots, family traditions, and an innate passion for food and wine. His expertise spans French, Italian, Progressive Indian, and Ayurvedic/Wellness cuisines, blending rich flavors and techniques inspired by diverse cultures. He has worked with some of the world’s most prestigious hospitality brands, including AMAN Luxury Collections, ALILA, The Oberoi, Taj Hotels, The Marriott, The Lalit, and more.
A distinguished alumnus of IHM-Goa, Chef Rakesh holds dual Hospitality and Hotel Administration certifications and a three-year Tourism Management diploma. His culinary excellence was recognized early on when he won the National Level Chef Competition in 2006, securing a remarkable position for his alma mater.

A strategic leader with a data-driven and performance-focused approach, she specializes in brand building, digital marketing, and product positioning.
Bavani has held leadership roles in Singapore, Dubai, and India, while also managing marketing strategies for the Australian market. She has spearheaded innovative marketing campaigns, scaled businesses, and launched high-impact sales strategies. She has been instrumental in establishing strong brand identities, fostering customer loyalty, and leveraging digital platforms to drive business growth.
As the Cluster Marketing Communications Director at Hilton, she oversees marketing strategies for three properties in Bangalore: Hilton Bangalore Embassy Golflinks, Hilton Bengaluru Embassy Manyata Business Park, and Hilton Garden Inn Bangalore. Her role includes developing and executing comprehensive marketing campaigns, strengthening brand associations, and managing media and public relations.

Chef Memo Hernandez began his culinary journey at the esteemed Instituto Nacional de Aprendizaje in Costa Rica, where he cultivated a deep respect for the craftsmanship and artistry of cooking. His global career has taken him to the turquoise waters of the Maldives, the dynamic kitchens of China and Dubai, and the lush landscapes of Spain, Fiji, and Tanzania. Along the way, he has developed an ability to connect local ingredients with global techniques, creating dishes that are as meaningful as they are delicious.
During his tenure as Executive Chef at The Nautilus Maldives, Chef Hernandez played an integral role in earning the property the prestigious Relais & Châteaux certification, solidifying his reputation for excellence in culinary leadership. His work at The Ritz-Carlton Yacht Collection, The Residence Zanzibar, and other luxury properties reflects a commitment to creating culinary moments that honor both the destination and its heritage.
